Any further than that and the time you spend flying, plus checking in, will probably eat into your day too much. Closer to home there are Paris and Amsterdam, but both really have too much to see in a day.
Given your wide travelling experience, I'd have suggested Geneva, as someone else has. The airport is real close to the city centre so you don't waste lots of time transferring. There's the old city, plenty of shops to browse (cheap and not so), the gardens alongside the lake, a trip on the lake itself perhaps. I particularly enjoyed the watch/clock museum.
I went on a day trip to Berlin once; had about 5 hours there and it was great. (It was in the days when you could hack down remaining bits of the Wall for souvenirs.) But like I said, it would depend on exactly when flights came and went. Hamburg and Copenhagen might just be in reach too.

Had a look on that skyscanner-its absolute pants, not to be trusted.
I search for geneva flights in october and november and it shows just easyjet as the cheapest for every single day. Strange as BA are similarly priced on their website.
Then I look at Gibraltar, same months, and it only shows Monarch prices! and BA is cheaper than Monarch! I wont be using skyscanner again, thank you.
