Since you are looking ahead flights booked well in advance are cheaper. Villas can be booked via established companies like James Villas or hotels can be booked direct often getting good deals especially at quieter times. In short shop around you can go for a lot less.
I go at least once a year. This year, I am going on 15th December, taking an 11 night Chirstmas cruise to Bahamas and Virgin islands and have 5 nights in Orlando and 1 in New York. Internet searching for about three hours gets me and my wife there and back for 2500 as follows:-
Flybe Exeter to Dublin 60 return X 2 = 120
Delta Dublin to New York - 198 return x 2 = 398
Jetblue New York to Orlando return 56 x 2 = 112
Car Hire 5 days = 100
5 Nights Hilton Garden Seaworld = 180
Cruise Celebrity Zenith 679 x 2 = 1358
1 night JFK Renaissance Hotel = 80
Petrol/sundries 152
Total 2500
I even save the 200 miles journey to Gatwick by going local. Last January I managed to do it for 1500 without the cruise for the two of us.
You have to be prepared to be flexible.
If you want a villa, theres tons of them on the internet.

Stick to your guns cherryelm. I manage to go away, usually cruising, three times a year. Have no debts or HP. I don't, however, drink or smoke. I drive older cars which I pay cash for. You make decisions on your life and what is important. I like to travel. I give up lots of other stuff to do it. Yet people who have HP, new cars, drink a lot, etc. call me "lucky" and think I am fiddling at work to pay for it. Life's about choices and I have made mine. You can't take it with you and time spent travelling is never wasted.
