Where would be a nice quiet place in the south of Cyprus?

Do you mean quiet places with hotels to stay in, quiet places with self-catering accommodation? Are you looking for somewhere near the coast or up in the mountains? What time of year are you looking at? Many places are (funereally!) quiet in the winter but busy in summer. There are plenty of quiet places in summer, too, but they tend to be a bit out of the way (obviously!). Our village is quiet most of the time - except for Bank Holiday weekends - even in summer; we're half an hour from Limassol (OK, 40 minutes, but who's counting?) at an altitude of 850 metres, and we have 5 wineries, and there are plenty of similar villages with rooms to let.
My Parents are looking to buy a place in Cyprus, maybe near or in walking distance 10 min, to the coast line. It is going to be a second home for them.
They are looking to visit 2-3 times a year for a few weeks on each visit.
The don't need to go clubbing and parting etc, they just want to relax with a few glasses of wine and some cheese.

Apartment or villa in a quiet part of Cyprus.
A small bit of entertainment.

Aaahhh Cyprus! It was three years this summer since I last visited, which I think is the longest period that I haven't been, since I was about five years' old!
You could try Polis. That's pretty quiet from what I remember. Otherwise, you could try Paphos. It's always been the quieter of the towns to visit. Leptos Village is a good bet, about 6 clicks from the Paphos strip. Past that you've got Coral Bay on the way to the Akamas Penninsula. If you head towards the hills from Leptos Kamares Village, you'll head towards Tsada, where there's also a golf course, if you like that!
Protaras might be good as well.
