Gran Canaria would be very apt, there are lots of resorts to chose from and golden sand not volcanic. There is a tourist submarine over in Puerto Mogan which is good fun as you obviously like fish! Lovely Island and very pretty too - you'll have a great time!
We went to Sharm-el Sheikh (sp?!) It was really nice and the hotel facilities were faultless. Stay in one of the resorts out on the sea rather than near the town of Sharm (they are much more secure). The hotel will probably run free shuttle buses to the town if you do want to go for a browse in the markets, and the main excursions will all pick up from hotels as well. From the hotel you can go straight outside to go snorkelling etc on the private beach and the heat isnt oppressive because of the lovely gentle breeze from the sea. I'd definitely go again!
When it comes to snorkeling Australia is the place to go, I'm just not sure of the weather condition during February there http:// www.tas tydesti nation. com/
