what happens if you don't tax your vehicle?

I presume that you can be fined for driving with no motor tax but does it also void your insurance?

yes,you will be fined by the dvla for not taxing your car,and also if you use it on the road and get caught you will be fined by the courts as well and the police now have the power to seize and crush any untaxed vehicle that is on the road,so if you really want to be that stupid,it ends up costing a lot more then the tax would in the first place.
It doesn't void your insurance though. Having no MOT would void the insurance.
It is a condition of any insurance that the vehicle you are driving is fully legal, ie it has tax and an MoT. This is usually buried in the small print though.
And unless you send in the SORN, you'll have to tax it even if its just sitting in your garage.
