we booked a hotel in tenerife to stay over new year a few months ago now. we are moving to the states but are coming back to stay in the canaries, already booked before we knew we were emigrating! so our travel insurance policy will expire in october in the uk so we wont be renewing it. will we still be covered for our stay in the canaries as we booked before the policy expired?

No, not on most policies.

You will have cover for cancellation up to the policy expiry date and nothing after that.
