How strict are they on checked in baggage allownace? We're allowed 50 lbs but one case weighs 52 and the other weighs 53. They say if it is over 51 they will charge $25. Will we get away with it?

I don't think so. Take a woolly jumper out and wear it.
I agree, not worth risking for a couple of pounds.
Not only are there likely to be differences between your scales and those at the check-in point you use, but (to my knowledge) every single airport scales within the UK (and abroad as well - even in the US, I seem to remember, unless perhaps at small domestic airports) weigh in kg. You will not be certain about anything until you are checked in.
