We are sailing with Brittany Ferries Portsmouth to Caern overnight and would like to know if the restaurants, bars and duty free will be open during our crossing - midnight til about 7 in the morning?

Anyone who has made a sailing at the time you mention will tell you for certain - but the best way to find out is by phoning the ferry company themselves quoting the precise sailing.
Yes, everything you expect to be open will be. When I was a student many years ago we used to work on the Fishguard-Rosslare ferries in the holidays and EVERYTHING was open 24/7. Sometimes we had to shut the odd bar for 20 mins or so for re-stocking but otherwise it will all be open so you can spend your money.
