Nothing much to do at Uluru except see the rock (you can do little flights). Cairns/Port Douglas, see the barrier reef and go up into the Daintree rainforest. You've got quite a while there, haven't you? It's pretty remote - the nearest capital is Port MOresby in PNG, not Canberra. Sydney, well, whatever - Bondi, Manly ferry, harbour bridge climb, opera house, lots to do there.
At Ayers Rock you can do a guided tour of the rock, out of respect to the aborigines don't climb it. At Alice Springs the desert garden is very interesting (mind out for the flies there!) at Cairns both the rainforest and Great Barrier Reef are great days out. I think it was in the rainforest where you have the longest cable car journey in the world. There's also a hot air balloon early morning flight over the forest. Your hotel will only be too glad to book your trips for you. Have a lovely time I had a great time over there and would go back tomorrow...
You will have a great time, we have just got back from a similar trip.
We went on a whale watching trip from Sydney and saw a humpback whale and her baby as well as dolphins. The botanic gardens are worth a visit as is Darling Harbour. We also did a trip to the Blue Mountains, its do-able as a day trip.
In Cairns the Skytrain is great. We also went to Daintree National Park, and were lucky enough to see some of the wild life though we were told golf courses are the best places to see roos.
We stayed in Palm Cove which was a lovely resort. The weather was quite breezey so we didnt get to the reef, which gives me an excellent excuse to go back.

At Ayers Rock do the Sounds of Silence dinner and walk round the rock after the sunrise trip, doing the northern side first (it gets very hot very quickly).
Cairns - Kuranda train and cableway back down. In Kuranda avoid the crowds by going for the rainforest walk.
Sydney - think about hiring a car and going out into ther Blue Mountains. Car hire, if organised form UK, is much cheaper than trying to organise in Aus.
