Boat just like the old days
Train to France, train to Spain
Train to portsmouth, ferry to Bilbao?
Train to Plymouth, ferry to Santander.
Or you could just get the car out, drive down to Calais option of ferry or tunnel train then drive through France to Spain giving me a wave as you drive past...
Motorbike
Isn't this cute; we've got a question by a 'jelly baby' and answered by jelly-babies..... let's create a jelly baby club as somebody else suggested! LOL
I wasn't quick enough, an intruder has got in an AVATER (only joking JJ)
The German railway service (Deutsche Bahn) provides an online timetable which brings together the rail services of all operators across Europe. It can plan any journey easily:

(Your route would start with St Pancras International to Paris Nord, then the Metro to Gare d'Austerlitz, from where the night trains to Spain depart).

This site has loads of useful information (including, for example, details of how to get across Paris) about train travel from the UK to Spain:

Alternatively, start by taking a train to Portsmouth (or possibly Plymouth) and then the ferry to Santander:
