The mutton bird (I think) is a very fatty sea bird that requires many 'boilings' to remove excess fat before trying to roast them. To my knowledge there are no printed recipes but locals, when asked, will usually reply "you've got to boil the b******s".
Mutton birding is a seasonal outing, sort of group activity. I did try them once, they are truly revolting and would be better left to their own devices in the southern ocean. In this day and age of frozen chicken thighs the hunting of the mutton bird is unnecessary.
