why does gordon ramsay make it and marinate it with walnut oil instead of the usual way i allways see with yogurt .

Masala simply means a mix of spices - as for variants in cooking methods of Tandoori, it's simply personal choice.

for years i used yoghurt with a blend of tandoori spices but found too much watery liquid would come out of the chicken when baked so i started using just the tandoori paste mixed with oil - i use sunflower because thats what i use in cooking and the whole family prefer it like that - its drier and very tasty
