How can I book a flight from Jersey to Southampton in December, when all the timetables online only go 'till October?

You can't. You have to wait until bookings open. Some of the airlines will e-mail you when this happens if you register with them.

As Dzug says, you can't book yet.

The only airline with scheduled flights on the Jersey-Southampton route is FlyBe. I've just taken a look at their archived press releases. These show that, last year, they opened bookings for their winter schedule on 27th June. This suggests that you've got about 4 weeks to wait before you can make your booking.
