Software nowadays, be it games, Microsoft Office, photo editing, all push out updates/fixes/upgrades over the internet. Most software is now obtained via download, not physical disc. Even games that are bought on DVD immediately download updates when installed.
Also, you would not be able to access email or this message board (though you could do these on a phone with data). Technically, you could go to somewhere with free wifi whenever you wanted to download something or periodically to get updates for your existing software. Another option is a data dongle, to pay per use, but they are slow and could work out more expensive than having wifi in your home.

Can still be used for serious things such as documentation and spreadsheets and suchlike. But you want to enjoy.
Games used not to need the Internet, but folk allowed businesses more and more leeway and now decent ones, like as not, won't run unless they sign in somewhere or download patches. And games are less easily come by given that game shops claim to sell PC games but concentrate on console games instead. And if they do sell PC games it'd probably be as an unrequired download.
That justified sad outlook mentioned one can get drawing/painting packages. There must be other arty/crafty stuff too. Music, knitting, whatever. In fact you can plug some musical instruments into your PC. I suspect what you can do is only limited by your imagination.

I don't think that I would wish to be without an Internet connection, even if it were only used for participating in AnswerBank.
