Am I Right To Feel A Bit Miffed?

Where I work, I'm the single paid cook. When I'm off,there are 2 volunteers...both young,former chefs who are in recovery. I generally leave guidance notes...what's in the freezer,what needs using up...that sort of thing.
Yesterday was my day off,and we were due to have visitors over lunch who were considering us for some generous funding. So a nice meal was in order.
Volunteer "D" was away,and volunteer "M" was a bit limited in mobility due to a sprained or broken arm,and a bad back. To make things easier...as I didn't even know if he'd actually be in...and so I'd know the meal could be managed by another staff member, and was suitable for our visitors...I defrosted and left to marinate 2 gammon joints so they could be popped in the oven first thing. I also prepared a fruit crumble.
I came in this morning to find the crumble had not been used....he didn't want to do it.
And,he'd taken the gammon...which was already in the oven...boiled and then put it in to roast with his own glaze...because he wanted to do it his way.
Maybe I'm being petty...but I felt pretty annoyed about this. I fought to be able to have a say in the sort of food we do( it used to be primarily tins and jars)...and will support being creative. But I don't think it's right to undo or mess about with someone else's efforts.
Thoughts please.

Oh...I happily leave him to his own devices under usual circumstances. Thought we've not had the opportunity to work together,I've heard he's quite creative...though a bit of a loose cannon. ;-)
