Our family favourite is Halloumi kebabs which are cubes of cheese, mushrooms, red/orange peppers and red onion marinaded in zest of lime, olive oil and chopped herbs, then threaded onto skewers and cooked untill veggies slightly charred at the edges and the cheese is all squiggy in side.
I also find that homemade bread goes down a treat. I often cheat and use one of the packet mixes of speciality breads you can buy in the supermarket. They are very easy to make and work out far cheeper than buying ready made fancy bread.
Loads of stuff to try
Honey roasted new potatoes.....part boil new potatoes for 10 mins, drain then put in a dish. Drizzle olive oil and runny honey over them and sprinkle with thyme. Roast in over until nice and brown....about 30 mins
Kebabs.....get some wooden skewers, add chunks of red onion, pineapple, peppers, mushrooms, courgettes as well as whole cherry tomatoes and chunks of chicken. Barbeque until cooked. They can be marinated in anything you like.
Pasta salad.....Boil some pasta and put in a large bowl. Add chopped onions, sliced peppers, mushrooms, peas, sweetcorn, pineapple, chuck some finely chopped garlic in, some oregano and a generous dollop or two of mayonaise. Mix well. A dash of lemon juice in that goes down well too.
Rice salad.....Cook rice and put in large bowl. Add very thin pieces of red peppers, some peas, some sweetcorn and some finely chopped mandarin oranges (tin of)....mix up and leave to cool
There's a few bits for ya !!!
chunks of fresh salmon wrapped in bacon and then threaded on skewers - TIP - don't forget to soak your skewers in water for 15 minutes to stop them catching fire! I know it sounds a bit odd but the saltiness of the bacon goes really well with the sweetness of the salmon!
if you do veggie ones, don't forget that the veggies may not look done, but they will be after about 10 minutes. If you carry on cooking them they just char away to nothing!
fresh corn on the cob is dead easy to do, as long as it's still got the leaves wrapped around it, you can dip it in a bucket of water and then put straight on the barbie
I would serve with ceaser salad, cos lettuce, shop bought sauce, croutons and parmesain cheese
for pudding, how about putting a 2" slit in the middle of a banan - with skin on - and then shoving in a square of dark chocolate, a marshmallow (and a teaspoon of rum for adults).prepare well in advance and then as you sit down to eat your main course, bung 'em on the cooling barbie. it doesn't matter how long you leave them, even if the banaa has gone slushy it's still lovely to scoop out with a spoon. kids love them!
