For more on marking an answer as the "Best Answer", please visit our FAQ.Scrape out half an aubergine and mix the fleshy scrapings with the mince and cook with a tin of chopped toms, some onion and herbs (or whatever else you fancy throwing in). When done, stuff the mix back into the hollow aubergine half, sprinkle with cheese and bake in the oven for about 20mins. Serve with rice...delish!
Add 450g of mince, raise heat and stir until browned. Add 2 medium potatoes (peeled and cut into small chunks), 3tbsps tomato puree, 400g tin chopped tomatoes and another 150ml beef stock.Season and simmer for 20-30 minutes until potatoes are tender.
Serve with warm naan bread.
Beef & Noodle Bake
450g Lean minced beef, 1 medium onion (chopped), 2 garlic cloves (chopped), 1 green pepper (seeded and chopped), 227g can tomatoes, 1 vegetable stock cube, 175g medium egg noodles, 275g fresh soured cream, 225g cottage cheese, 50g Double Gloucester cheese.
Dry fry mince until brown. Add vegetables and stock cube, bring to the boil and simmer for 15 mins, stir occasionally. Spoon into an overproof dish. Meanwhile cook noodles as label directs and drain. Mix soured cream and cottage cheese together, then stir in noodles. arrange noodles over meat and sprinkle cheese over the top. Cook at 180C (350F) Mark 4 for 45 minutes.
Don't be put off by the cottage cheese etc I don't like it much either but this dish is delicious.........
1 Pound of Hamburger (I think you guys call it minced beef) � Browned & Drained
1 Pack Taco Seasoning
1 Can Rotel Tomatoes (has jalapeno peppers in it)
1 Can Dark Red Kidney Beans
1 Can Corn � Whole Kernel
1 Can of Water
Mix together & cook until it looks done.
After you put it in your bowl � taste it, it is great that way and less fattening � then put a big blob of sour cream in it and mix it up � then taste it again.
Garnish with black olives, cheese, onions, chives � whatever makes you happy.
