Neat as cattle I can see but where does ta'en come from. The only definition I can find is an archaic poetic version of taken. Could you explain please?

Ta'en as a contraction of Taken is in Chambers- and not marked as 'poetic' or 'archaic'. Take = Perform is in Chambers too, so I think the clue's fine.
