I'm aware current Royal Mail 2nd class postage large is 76p. I still have a few old 1st and 2nd class postage stamps left and I wish to use them. Does Royal Mail value old stamps as new prices. Is this the correct postage for 2nd class Large?

If you have a stamp with "2 Large" on it, however old it is, you can use it on a large envelope. If your stamp is only "2nd" you will need to add additional stamps for a large letter but I don't know what value.
I think the only safe way is for you to go to the Post Office and ask what the cost is to upgrade from 2nd to 2nd Large.
We recently wanted to send a letter "signed for"; we used a 2nd stamp (about 4 years old) and bought the stamp the PO said for the upgrade.

Yes. Any stamp with 1st or 2nd on it is valued at the current rate.
That's 65p and 56p respectively just now. You'll need an extra 20p on top of your 2nd.

A stamp showing '2nd' retains the current value of a second class stamp, irrespective of the price which was paid for the stamp or any price increases since then. So the 1p stamp is unnecessary, as the other two stamps cover the required 76p (assuming, of course, that the relevant weight limit isn't exceeded).
It is the value of money that falls not the value of the stamp that rises. The stamp is always worth a 2nd class delivery service. You paid for the stamp with money to the 2nd class postage value at the time, it should be accepted as of the 2nd class postage value at any future time. Unless the issuing company (Royal Mail in this case) decides to want to pull one over you.
The way that stamps work is this....if it says 2nd class Large, than it doesn't matter how old the stamp is...its still valid. Ditto for an ordinary 1st or and 2nd class stamp.
But check with the Post Office that you are using the correct 2nd class postage for non-standard letters.
