I have hotmail and also yahoo email accounts and I would like to customise the font style size and colour so it becomes the default setting for emails I want to write. However I can't seem to find a way to do this ..... can anyone help me.

In Yahoo webmail you can choose between 'plain text' and 'colour and graphics' as the default for composing emails.

You can change this in Options -> General Preferences -> Composing Emails.

If you have selected 'colour and graphics', the font is always Arial when you start a new email.

If you have selected 'plain text', you can change the font that appears on your screen using the Internet Explorer options. Go to Tools -> Internet Options -> Fonts -> plain text font. When the recipient views your plain text email, the font used depends on the settings on their computer.
