For about 8 big thighs with skin off.
2 tbspns of Jerk Seasoning (I use Dunns River)
4 spring onions
3 garlic cloves
2 teaspns chilli flakes (you can adjust this)
2 tbspns soy sauce
1 tbspns honey
Juice of 1 lime
Splash of Rum (optional)
2 tbspns thyme
Finely chop spring onions and garlic, add rest of ingredients and mix. adding rum and lime juice to get a paste. Cover slashed chicken and leave overnight. I use my griddle to cook. If you like it really spicy, you can add extra chilli or a scotch bonnet pepper. Only 1 mind.
