Veggie Uses For Mint Sauce

I have discovered 2 jars of Tesco Finest mint sauce at the back of my cupboard that I want to use up.
I can think of ways to use small amounts such as putting a spoonful into mashed potato or adding some to pasta and peas etc but I'm looking for a few more ideas.
I know a little goes a long way with mint sauce but was wondering what I could maybe do to use a lot of it up? Any ideas need to be veggie please.

Make Pea and mint soup
Courgette and mint salad
• Trim the ends off 1 courgette and grate it lengthways into wide(ish) strips.
•Thinly slice 4 spring onions.
•Make a dressing out of 1 tsp. olive oil, 1 tbsp. white wine vinegar, 2-3 tsp. lemon juice (fresh or bottled), fresh black pepper and a tsp. of mint sauce.
•Mix courgette into the dressing.
•You could add bits of diced red pepper too.

It will last for ages and ages...I am using a jar that is perfectly fine and has been open for 2 years!! Vinegary things will be left, along with cockroaches, after the holocaust. But it can be used, mixed with yogurt as a side dish for curry, or as a dip for tandoori , or on burgers. Slap some into fresh fruit, particularly melon...such a fresh taste.
