Veggie Food Pairing To Big Red Wines

My other half went veggie last year, though still eats fish.
We have a few nice bottles of red wine which would have been cracked to enjoy with a roast or a big juicy steak!
So now I have to pair them to veggie or fish dishes. I have a few recipes that would suit such as mushroom bourguignon etc but does anyone have any others?

As a vegetarian, I'd drink red wine with a roast dinner too. Its too warm for me for the heavy nut roast dinner just yet but a butter bean bake, roast potatoes and green veg would be good.
Or any cheese based dish is good with red wine, as is pasta. Have a look at Italian vegetarian options, always good with dark red.
