Can anyone recommend a good,simple to use method of transferring data from old laptops to my new one please ?

Connect both to your router. Make them members of you home group, drag and drop from old to new.

..or if you haven't got a router/network available, copy old data onto a USB stick and then copy it to the new one.

you can use a data cable or rj 45 cable to connect to ethernet port of both laptops and share your data and then copy to your laptop.
Sharing- it's a bit long process you can check this on youtube.
another method- you can download share it from internet and transfer your data.

You do make regular backups on an external medium , don't you? If you do the solution is simple, you simply copy the data from the backup on to your new laptop. If you don't it's time you did or, one day, you will be on here asking how you can retrieve data from a broken laptop disc.
