Herbs - Borage
2 Answers
Does anybody have any suggestions for culinary uses? Most of the books I've looked in can only suggest putting the leaves in Pimm's (not necessarily a bad thing) or crystallising the flowers for cake decoration. Can you do anything else with it?
Thanks

add the leaves to green salads, add to cream cheese (has a mild cucumber flavour) add to a mayonnaise, add to tother sopus, use the flowers as agarnish on fruit punch, to fruit salads to cakes and to show off, freeze in an ice cube - the bright blue flower looks great floating in your G & T. Also make a tea infusion - loads of good stuff in the plant and historically used as a natural remedy for several things including reducing swellings.
