Beat them, add a small pot or two tablespoons of Greek yoghurt add herbs and season well, pour over chopped mushrooms, thinly sliced peppers and cooked sliced potatoes in a shallow baking dish, bake until just firm. You can add what ever you like to the egg mix, smoked salmon and asparagus is lovely as is cheese and onion with loads of chives. Basically it's quiche without the pastry.
Another easy one is bake a potato, remove the inside beat in the egg yolks add some grated cheese and put back in the oven for ten minutes tastes that bit creamer and doesn't need butter.
