Dash cam from Aldi it states. 2min / 3min / 5min seamless cycling recording (selectable). Does this mean the max time it records is 5 minutes. After which you have to start recording again. A bit of a pain if your doing a journey of a few hours.

I think you will find it records 2/3/5 mins in segments. Continuous recording throughout. When the camera sd card get full up it overwrites the oldest segments.
Thats what my dashcam does.

No, dashcams record in 2/3/5min blocks until the card is full. At that point, depending on your choice, it either stops recording OR starts to overwrite the oldest blocks. In other words, if your card can hold 4 hours of recording and you go on a 5 hour trip, only the last 4 hours will be available, the first hour having been overwritten.

Incidentally, both my dashcams can be set to use 1080 of 720 resolution. Until recently I had them set to 1080 on the grounds that the picture would have more detail. I tried them both at 720 and found that the detail seemed to be no worse - I could still read number plates, signposts etc. I now have them set at 720 and get much longer recording times - useful because I often make journeys longer than the recording time on a card and it's not always convenient to stop to swap the card. I would suggest that any current dashcam users try the experiment.

Do you leave your dashcam in your car at all times or do you take it out when the car is left parked? I was wondering if there is a risk of someone breaking in and stealing it.

My first dashcam was very small (chosen deliberately) and I always left it in the car. My second one is larger but I still leave it in the car. There are so many of them about nowadays and they are not overly expensive, so I feel the risk is minimal.

BHG, why do you want to keep a recording of your 5 hour journey? I would be happy to only keep the last few minutes. Many dashcams have a button you can press to preserve a recording of an incident happens.

I tend to keep the recordings of all my journeys for about 2 months. The reason being that if something crops up that I wasn't aware of at the time (say I get a speeding ticket) I can check back and see exactly what went on.
I was stopped by the police in Austria some years ago and accused of knocking someone off their scooter with my caravan. I didn't have a dashcam at the time; fortunately I was able to persuade them that the incident had happened before we reached the spot by describing the after-accident scene. On that occasion I was stopped shortly after the incident but had it been a few days later I could have had difficulty in showing that it wasn't me; playing back a dashcam would have proved the point.
