I wonder how we are still alive.
Just watched Greg Wallaces In the Factory. This was set in a frozen fish factory. They were talking about defrosting food. They say the rule is to defrost it in the fridge always.
I usually leave it on the worktop over night or if get something out in the morning I will unpack it, put it on a plate and put it on the table in the conservatory.
I was horrified when they showed Petri dishes with bacteria in that included ecoli from defrosted food. I will now do it correctly. I was really shocked.

Fish and meat in the fridge if there is room everything else in the coolest place I can find. Size is less important than being able to do it slowly and effectively.

if you weigh your food and set the time for that weight on defrost it wont go hard round the edges,don't just "bung" it in on normal mode for a few mins.
