Is it essential to lay plastic sheeting under the decking, once weedkiller has been applied?

Whilst it is not essential, it would be advisable to do it, to avoid any plants taking root in the future.

I'd be more inclined to lay a weed membrane.

Thank you both for speedy answers. I feared as much.

weed membrane is the right thing to use the plastic can just hold water and pool it around any posts causing rot
