Retro, I would enthuse if I could but Mexican is one cuisine I'm none too fond of.

the rest of the griddled chicken thighs last night that were dressed in shallots/garlic/lemon juice/white balsamic/and olive oil, flat parsley then added.

I'm adding the leftovers to iceberg/watercress/ cucumber and red chicory and a little more dressing minus the shallots but with a little maple syrup added and a wee bit of flat parsley....

Shepherds pie from the freezer with any veg still left in the fridge to be used up before hols. Might make extra gravy to go with it
