It all depends what you're cleaning up. Half of the time i use a spray because it's easy and will also take away and stickyness for example if you drop some juice. I rarely have time to fill a bowl with soapy water and waste all that water when i could use two sprays and a cloth.
I also have vinegar in a spray which does the trick sticky wise but it's not as antibacterial for example it won't kill staphylococcus.
Well we also existed a long time before vaccination etc.. but it's a situation where you could risk getting hepatitis or you could avoid it i know which i'm choosing.
In a catering kitchen, cleaning involves use of hot soapy water...followed by disinfectant spray. The soapy water removes grease and food debris which is something the sprays can't do. Of course, that's what we HAVE to do. At home you need to find what works for you. I often use the wipes as they are far less messy, and I hate having wet cloths hanging around.
