Hi,

Any suggestions for a late supper?

I want to make something nice for my husband and I on Sunday night - but it has to be fairly quick and easy as I am at work til 8.30 so won't get home til nearly 9pm - and I don't want to eat too late so something fairly light but still tasty would be great.

We have all the usual stuff in and no special dietary requirements (other than mr dragon has a nut allergy)

BAKED SANDWICH SUPPER

Serves 1

4 slices white or brown bread, buttered
Made mustard
2 slices ham
1 tomato sliced
2 eggs
3 tablespoons milk
salt and pepper

Set oven to gas mark 4, 180*C / 350*F

Spread two slices of bread with mustard and make up 2 rounds of sandwiches using the ham and tomato for the filling. Remove crusts from bread. Cut each sandwich into 4 triangles. Place in a small ovenproof dish. Beat together eggs, milk, salt and pepper, pour over sandwiches allow to soak for about 5 minutes. Bake for 30 minutes or until custard is set and the bread golden brown in colour. Serve immediately.

Variations:

Try tongue, corned beef, tuna or cheese instead of ham.
Sprinkle with grated cheese, if wished.

Will look for some others, meanwhile...

Oh! Have made similiar to this and fried (naughty) instead - delicious!!

EGGS BOULANG�RE

cooking time: 15-20 mins

for 2 servings

1-2 cooked potatoes
1/2 oz butter
salt & pepper
nutmeg (?) [sorry if not allowed for mr d]
1+1/2 ozs grated cheese
2 eggs
1 tablespoon thin cream or top of milk (can u still get that?)

1. Slice potatoes and fry in the butter until brown on both sides.
2. Put into a greased fireproof dish and season with salt & pepper and a pinch of nutmeg (if using)
3. Sprinkle the cheese on top.
4. Break each egg carefully on top of cheese, sprinkle with salt & pepper and cover with the cream.
5. Bake about 10 minutes in a moderate oven, gas mk 4 / 180*C / 350*F

EGG & HAM PAN SANDWICH

Serves 1

2 medium thick slices white bread, buttered
1 slice cooked ham
1 tbspoon tomato relish
1 egg, beaten
1 tbspoon milk
salt & pepper
1oz butter
1 tomato, halved

Make a sandwich with the 2 slices of bread, ham and tomato relish. Mix beaten egg, milk, and seasoning together. Pour into a shallow dish. Place the ham sandwich in the egg mixture and leave to soak about 30 seconds. Turn over (not you) and leave to soak up the remaining egg mixture, about 1 minute. Heat butter in a frying pan, add sandwich and fry over a medium heat for about 2 minutes on each side, or until golden brown. Serve with fried tomato halves. (optional)

p_d, as with most recipes, alter to suit your own taste/preference. I usually add grated cheese to ham sandwich and substitute sweet chilli sauce (everyones fav)for the relish. Lee & perrins is also tasty!

I would recommend wraps. Get some chicken breast,fry in a little olive oil,add sliced peppers,sliced red onion,stir in some tikka spice mix,and serve hot.add some cucumber and mint raita,put in a wrap and enjoy !!!!

I think I've decided on.......toasted ciabatta, spread with tomato paste, with sliced chicken, bacon and cheese melted over the top
