Cheese on toast is just slices of cheese grilled on top of bread.
Rarebit involves the cheese being made in to a sauce.

seems english welsh and scottish all have their methods..

I assume it's called a rarebit, because it's a rare bit of brea topped with delicious cheds, rare because i assume cheese would be expensive back in th day, so to a peasant, the bread would be a rare bit cus it's sprinkled with expensive cheds.

To us modern folk ched on toast makes more sense.

I really like haggis rarebit, but the wee b*****s are so fast on their feet they are hard to catch. Usually end up just using cheese.
