I've got my foodie hat on today. We're having roast pork belly with crispy crackling, roast potatoes, celeriac purée, green beans, broccoli, spring greens, carrots, peas and creamed spinach.
I always like to do a mound of veg so I have plenty to blitz for Jnr and sometimes I like to make it into bubble and squeak the next day.

He used a jointed chicken but I used 9 seasoned thighs. Browned them skin side down with 1oz butter in a buffet dish, set aside, soften 2 chopped shallots and garlic clove, put thighs back in with skin side up. Pour over 2oz of single malt (I had some, but am going to try it with blended next time) let it bubble. Add tbspn of Dijon mustard and tbspn whole grain mustard, then add 750ml chicken stock, plus some mushrooms and 2-4 quartered tomatoes. Cover and put in oven at 150 degrees fan(He cooked his on the top, but I find thighs can be tough if you do), for about half an hour. Put on low heat on top plate. Pour in some double cream and mix, thicken a little if too runny. James puts wild garlic leaves to wilt at this stage and decorates with the flowers if in season, but I didn’t as they weren’t. Scatter with flat leaf parsley. He also added small new potatoes cut in half, but I had no room, so served separately on the side with the sauce poured over them.
