We do love our veggies but I get a bit fed up with the same old same old and do like to try something different.
Tonight we’re having Italian roasted cauliflower which basically means roasted cauliflower with Parmesan chucked over after 15 minutes, and roasted for a further 15 minutes.
Am also doing garlic roasted carrots...longways halved carrots smeared with a mixture of olive oil, balsamic vinegar, lots of minced garlic, and thyme.
Anyone have any interesting ways with veg? I’m a bit sick of stir fry..
One of my favourites; halve courgettes down their length, grill 'skin side up' smeared with butter for a few minutes, turn them over, cover them with coarse grain mustard and grill again for 2-3 minutes; lovely
Mum used to do a cheesy veg bake. Cauli, broc, pots, carrots, baby corn green beans any thing you fancy really chunked and covered in cheese sauce. I still make it and still love it.
