Healthy Curry Sauce Recipes?

Sorry.. even tho I asked for clarification I have no idea how to make curry sauce - low fat or otherwise!

My partner is the curry king and uses several good books, like Pat Chapman's Curry Club ones. He cuts down on fat by grilling the meat first, frying stuff in water, etc. The sauces are either tinned tomato based or yoghurt based. All are yummy and we rarely have one dripping in oil like most restaurant curry sauce.
