Does anyone, and has anyone ever, made a choclate log covered with ganache and frozen it ? I like to get ahead with the cooking of Christmas dinner and usually I leave this until Christmas Eve.

yes you can freeze it if its "proper ganache" just made with chocolate, maybe butter and cream.
