How do I make Lebanese rice?

A Lebanese friend invited me to her home for a family dinner once and her mother had prepared a huge dish of rice that was SO delicious. I asked her for the recipe but she never gave it to me. What I do remember is that she first fried the raw rice in butter, then added boiling water. The rice was light and tasted of lemon and spices. I think it contained cashew nuts? Long time ago. Does this dish have a name and could I please have the recipe?
Same dinner - chicken this time and I could have sworn that there was allspice and lemon used to cook it, but once again, no recipe.
I look forward to you clearing up these mysteries for me.
