Sticky Date Pudding suitable for diabetics?

Hi, I live in a retirement complex and we have asked for Sticky Date Pudding to be put on our menu but our chef says it is too sugary for the many residents that are diabetic, could anyone tell us if they know of a recipe that would be suitable please? Many thanks Ann (Tasmania, Australia)
ps: We did think of using sugar substitutes but he won't use these either!

Ann it doesn`t matter if you find a recipe,he`s not going to do it. Any chef worth his apron would use substitutes if he intended helping diabetics have a varied diet. I always put myself out to help people in my catering career, he`s what I class a lazy chef.

Forgive me, Ann, but surely not everyone has to eat the same thing every day, and those with diabetic conditions can opt out? I'd be checking my management agreement if I were you - or sacking your chef and getting one who is more accommodating - presumably you all share the costs of his wage?

As a diabetic that used to love sticky date cake I can confirm that it is not suitable for diabetics (notwithstanding a little bit of what you fancy occasionally). However, that should not stop others having the choice.
