I posted a while back re a lost recipe. Chris you found the right one but I didn't realise, sorry. We had it tonight for a starter, it was really good.
Toast the crumpets, drain a tin of crab. Slice a chunk of cucumber into narrow strips, put in colander, sprinkle with salt, leave for 10 minutes to drain. Mix crab with crime freche, chopped dill and lemon juice. Put cucumber bits on buttered crumpets. Top with crab mixture, sprinkle thinly sliced spring onions on the top, enjoy!
I changed the original recipe by adding spring onions.
It really was good.

I like a crab gratinee: tin of white crab meat, tiny tin of John West dressed crab, half a pint of white sauce, good dash of fino sherry, cupful of fresh white breadcrumbs, finely diced and de-seeded green pepper. Mix thoroughly and season gently. Warm through gently in saucepan. Transfer to buttered ramekins, sprinkle with some more white breadcrumbs, add a knob of butter and flash under a warm grill until breadcrumbs are toasted. Serve with melba toast - really tasty starter, serves 4.
