Hi, does anyone know if you can call a hospital to notify them of your change of address and GP, or does this have to be done by letter? I have four hospitals to tell so would rather ring them if possible but not sure if the people answering the switchboard can do that or direct me to someone who can. I'm seen by a few different departments as well and hospitals don't seem to have much overlap or good communication when it comes to having this sort of data on their systems.

I am thinking a better bet would be to use the "contact us" arrangement on their websites, they should have an email address

Agreed. You might even find a form for the task, as with this example:
https://www.uhs.nhs.uk/ContactUs/Update-your-address/Update-to-your-address.aspx
Once you change address with your GP, does that new info flash around all the NHS web sites?
It does for me, Theland. It seems to happen by magic.
Can you not just use your GP to change your address, hospital will be notified.
