Has anyone ever made a cheesecake (baked or set) without the biscuit (or whatever) base? We're currently on a very low carb diet and like to entertain our friends a lot. By way of a change from other stuff, I was wondering if I can make one of my usual baked NY style cheesecakes, but just omit the biscuit base, so as to leave out the carbs/sugar completely. Obviously, the cake section would have sugar in it, but just thinking about how it might work out. Has anyone done this?

I've even adapted that as individual cakes in ramekins, using none of the artificial sweetners, but vanilla extract and a bit of sugar free vanilla syrup.
For more ideas, just Google keto or lo carb cheesecakes. There are dozens of variations.
