Just taken a huge chicken balti out of the oven, ready for a visit tomorrow from our youngest with toddler, can’t wait :)
It was just a couple of jars of Pataks sauce, a pack of chicken thighs, three large onions, and a cauliflower chopped up, but it’s been in the oven on low for about three hours and is very delicious.
Lots of sides to have with it currently residing in the freezer.
Means I can spend lots of time out of the kitchen, and lots of time with family, will be good to see them after 18 months, can’t wait!

(I can recommend Bart's Pilau rice mix for an easy do-it-yourself pilau- just add a few spoonsful to the basmati rice before adding water, and cook by the absorbtion method)
