Is It Safe To Use Spouting Bolts To Fix A Handle To A Pot Lid?

I've got a pot lid made of glass and the metal handle has come off. It was originally fitted with two rivet style pieces of metal.
It would be easy enough to reattach the handle using two spouting bolts and nuts but I'm wondering if this is safe to do, seeing as the pot is used to cook with.
Any suggestions?

Zinc -coated bolts are easy to find, but I don't know how durable the zinc coating would be.
If in doubt, how about ordinary plastic bolts...
