Sugar and gluten free treats

Anyone got any recipes for sugar-and gluten free treats/sweets/cakes? I can use honey, xylitol, rice syrup, I really just need to know how to bake with these ingredients so the result isn't a dog's dinner. Thanks!

For more on marking an answer as the "Best Answer", please visit our FAQ.I make chocolate mousse from diabetic chocolate from thorntons, melt it in the microwave with a bit of double cream and let it cool. In a bowl whip together the rest of a medium pot of double cream, a teaspoon of slenda sweetener, a teaspoon of pure cocoa powder, a splash of vanilla extract and 2 egg yolks. Once this starts to thicken pour in your chocolate cream and finish whisking until light and fluffy. Refrigerate for at leat 2 hours, if you can manage that long!
Asda are now selling a lot of gluten free biscuits and cakes and things - most of these are dairy-free too which is how I found them - unfortunately I am allergic to chocolate and cocoa too - boo hoo. Really watch if you're using diabetic chocolate as it contains colossal amounts of sorbitol which gives diarhorrea and in most people - my diabetic mother included - will run right through and she got them from Thronton's thinking they would be better. I'll be interested to see your replies as I am also allergic to aspartame, fizzy drinks and all sweetners.
I know for bread recipes you can use molasses as well to sweeten things up.
Asda are also selling dairy-free chocolate in plain milk chocllate and orange flavour. I think their gluten free too. I cn't take them as they had cocoa solids in them but all the gluten and dairy-free things were in a liottle section in the pasta aisle. Might be different in other stores but don't expect them to be at the biscuits or choclate aisle as they are separate
