We’re hosting Christmas this year for quite a number of family and hangers on, which is fine. However, we’ve been asked NOT to do turkey this year, which is also fine, and are contemplating doing a lump of beef of some kind instead, with all the trimmings obviously.
Trouble is, it’s been a long time since we’ve cooked any kind of joint of meat and I’m wondering which would be the best lump of beef to buy.
Am leaning towards a rib of beef as I believe that’s a really succulent one.
What do the AB meat experts think, what would you go for? Thanks :)

I do think that beef is a dodgy idea when catering for many people as there will be people who want it really rare (me) and those who want it incinerated and everything in between. You end up pleasing some and upsetting others. How about a slow roasted boned and rolled pork joint as you really can't go wrong there?
If you have large numbers, ascertain their beef tastes and cook 2 x 2 ribs or whatever - one to cater for the saignant crew and the other for those who like it more done, à point, - a single joint usually has plenty of all though by using some judicious carving if just two or three of you. I always like 2 ribs in a joint as it gives more options and I love cold-afters for sandwiches/salads etc.....
