We stayed on a boat, not in hotels, but I think there must be some very good accommodation there because the Austro-Hungarian imperial family and aristocracy used to holiday there (places like Opatja and many others I can't remember) and some of the opulent villas they stayed in at the turn of the century were turned into hotels.
Croatia is a wonderful place to visit. The dalmation coast is stunning. Split and Dubrovnik are great and the islands are something else - like the greek islands before the tourist hordes invaded. Accommodation is as good as anywhere else in Europe. You can spend anything from a few pounds to literally thousands a night in a luxury resort. I've also seen the north coast on the istrian peninsula - Rovinj. Very italian (Trieste is only 100 km away). Most croatians speak english to some degree. Hotels and tourist areas you'll have no problems. It's a wonderful place with wonderful people... i can't recommend it enough.
