What airline are you considering flying with? That will determin if it's free drinks or not. A number of US based carriers will charge you $5 a drink if you are in economy.
As far as I know, Qantas still have the same policy as when I last flew with them: All customers, including those on internal flights, simply need to call the flight attendant whenever they want a drink. I've seen plenty of Ozzies get through a dozen drinks on a fairly short internal flight :-)

I often fly long haul on Virgin flights and you can usually wander along to the galley and ask for a gin and tonic or whatever, they are usually fine about it, although if you kept on going up I expect they might start to get a bit funny, after all you have paid hundreds of pounds for the flight !

Maybe they become concerned if you keep grabbing drinks because of the possibility of you becoming disruptive if too drunk!
I've done it on most long haul flights I've done in the last 5 years - but it's always been non-alcoholic only. Sometimes it's help yourself, other times it's ask.
Virgin, Singapore airlines, BA, Emirates all serve free drinks, most charter flights charge you in economy.
I always ask for 2 drinks when the trolley comes round and smile sweetly and say --to save having to call you down again ----
I dont think you can go and pour your own they must keep some sort of control, but if you go and ask politely would they mind if I had another drink I have never been refused.
All depends how you ask and if you have had a few in the airport before boarding and are slurring your words it will be a definate no, so then send the one in your party that doesnt sound sloshed. If you loud, you definately wont get.
