iv seen a few cooking progs,and the chefs make comments like....theres too many flavours going on in this recipe,iv tried to taste food like they seem too,but most times i cant pick out if there are too many flavours in something....am i alone?

I think some of them are just being a bit snobbish. Basically, if it tatses nice then the chef has done their job. I doesn't matter to me whether there are twenty ingredients and you can't pick them out by individual flavour. It's the overall blend like the costituents of a good perfume shouldn't be picked out individually. It's the end result and if that's pleasing, that's good enough for me.

My personal opinion, and although not a professional chef, I do enjoy cooking and feel I have quite a good knowledge of the overall prcocesses involved.
It's just personal preference. If you like it, eat it! You're not wrong.

Myself, I do like the simpler things.
