My grandfather was called up in 1940 during WW2, he was paying a mortgage taken out in 1933.
Would servicemen and women have the mortgage deferred till after the war, or would the building society have a different option?

Mortgages still had to be paid out of the servicemen's pay. My parents were in this position and they always said they had been better off during the war mainly because my mother was working full time in munitions.
My uncle was single during the war and rented his house out so he easily paid his mortgage.
